Simon

Founder & Head of Hospitality

Meet Simon, one of our Founders. Born and bred in West Sussex he’s no stranger to the countryside. He started his career in hospitality at Amberley castle and went on to work with some of the most influential people in our industry such as Gordon Ramsey, Heston Blumenthal and Danny Meyer. In 2020 Simon launched his own business Igniting Hospitality which has led the way to The Victoria Oxshott.

Matt

Founder & Culinary Director

Husband, father, Champagne lover and the man behind the food. He wanted to become a chef for as long as he can remember and one of his earliest memories is making Yorkshire pudding with his mum as a child. Matt has spent past 10 years working alongside Heston Blumenthal before opening The Victoria Oxshott.

Dani

Co-Founder

Wife to Simon, Mum to their son Freddie and two gorgeous dogs. Having worked in hospitality since she was 17, Dani’s love of the industry and expertise are going to be invaluable when it comes to developing the guest experience at The Victoria.

Louise

General Manager

She found her love of hospitality after realizing that working in the hair and beauty industry wasn’t for her, she took a job as a waitress at Loch Fyne to give her time to think about what she wanted to do in life, and it was there that she finally found her passion.

Tracey

Head Pastry Chef

Originally from Australia, working in restaurant’s such as Aria for Matt Moran, as well as Michelin Star Restaurants, under Serge Vieira in Chaudes-Aigues, France, spending 2 and a half years with the Fat Duck Restaurant, before moving on to taking on the role as Head Pastry Chef at Cliveden House. Tracey’s desserts are a nostalgic experience creating innovative desserts that invoke a memory you know and love, with an exciting twist. Described by The Guardian’s Grace Dent as an ‘’ imaginative patisserie wizard.’’ Why not try our new signature dessert with the changing of each season, currently a unique spin on a classic Victoria Sponge.
